My idea from marzipan in cookies came from Nigel Slater. I love him, he is my favourite TV cook, and one day I was scrolling through Instagram and he had made some chocolate chip and marzipan cookies. I have no idea what the recipe was, I just couldn’t stop looking at the photo and thinking about how much my cousin Sarah would love them. So in January we went to visit her in St Louis and I made the first batch of these cookies. They tasted amazing but they weren’t very good cookie-wise, they melted together into a lump. But I was impressed with the chunks of marzipan in the cookie rather than having it blended down to flour. It gave the cookies a Bakewell tart vibe, and I love a good Bakewell. The wonderful thing about these cookies is you can add anything to them as long as it goes with marzipan. Straight out of the oven these are DIVINE, the marzipan is soft and melty and they go perfectly with a good cup of tea. The recipe below is for cranberry, lemon and chocolate chunk but feel free to play around. I made apple ones last week and they were awesome.
Things to note: I make these vegan. No eggs or dairy. You can use both and they come out great but we substitute a little orange juice for eggs, but you can also use applesauce. I used coconut sugar, but brown works well too. These measurements are not exact. True to my family I just make up recipes as I go so I have no idea the amounts.
MARZIPAN, CRANBERRY AND DARK CHOCOLATE CHUNK OATMEAL COOKIES
1/2 Cup butter/vegan butter
1/2 Cup(s) firmly packed brown sugar
4 tablespoons molasses
2 Swigs of orange Juice (maybe 1/4 cup, eyeball it)
1 Teaspoon(s) vanilla
1-1/2 Cup(s) all-purpose flour
1 Teaspoon(s) Baking Soda
1 Teaspoon(s) vanilla extract
1/4 cup of dark chocolate cut into chunks
1/2 lemon (zest and juice)
1/2 Cup marzipan
1 Cup cranberries
3 Cup(s) oats (quick or old fashioned, uncooked)
– Cream together the sugar and butter until light and fluffy and then add molasses, orange juice, and vanilla. Mix until everything is combined.
– Add cranberries, chocolate, lemon, baking soda and flour, and mix till everything is combined. Once you see it all coming together add the oats and fold in. Once everything looks good out it in the fridge and let it chill out for a while.
– When ready to bake pre-heat oven to 375’F and take cookies out of the fridge. Roll 2 tablespoon size balls of mixture in your hand and flatten out to circles about 1/2 centimeter thick on a baking tray. Put in oven and go watch an episode of Pokemon Indigo League.
– 15 mins later you will have wonderful cookies. Put on a cooling rack and try not to eat them straight away because you will burn yourself. I know, I’ve done it myself.
They are best eaten warm, with tea or a good glass of the milk of your choice. Feel free to cut back on sugar if you feel it’s overly sweet, I think the cranberries and lemons balance this out.
